My favorite summertime recipe to make is cucumber salad. It is easy, fast, and yummy, and perfect to take to any barbeque or get-together. If you are like me and plant a garden every year, the recipe just got easier. I plant a few cucumber plants in the garden and make cucumber salad weekly. If you do not have a garden yet, I would suggest finding a great farmers market or stand where you can buy local produce. For those local to the Wapakoneta, Ohio area, I would highly suggest you check out Hilltop Harvest Farm right on 33. They have great produce for a great price.

Before we get to our recipe, let’s talk a little about the health benefits of cucumbers. Did you know they have protein, fiber, vitamins C and K, Magnesium, Potassium, and Manganese all piled into that yummy, long, lean, and green garden veggie!? Since they are about 95% water, they are great for helping you stay hydrated, and we all know our guts need that fiber for our system to stay regular. The antioxidants such as beta carotene in cucumbers can help fight free radicals in your body, help with skin, immunity, and promotes eye health.
After hearing all those great benefits, I am sure you are wanting to get eating your cucumbers. Other than this recipe, a couple of other great ways to use cucumbers is in your water or on your salad. I love all the ways, but I am a bit partial to this recipe. So I won’t make you wait any longer. Here is my cucumber salad recipe.

Ingredients
4 medium cucumbers
1 cup mayo (I like these 2 options that don’t have seed oils in them – Primal Kitchen’s Mayo w/ Avocado Oil or Chosen Food’s Classic Avocado Oil Mayo. I get Primal Kitchen from Thrive Market and the Chosen Food brand from Costco.)
1/4 cup organic cane sugar
4 teaspoons apple cider vinegar
Directions
In a large bowl, mix together the mayo, sugar, and vinegar. Slice the cucumbers into your desired thickness (I normally slice them very thin) and add them to the bowl. Toss so the cucumbers get coated in the sauce, cover, and chill in the fridge for at least an hour. Enjoy!
